We all know that eating a lot of cheese products is not the best for our waistline or health. Cheese is one of those delicious foods that needs to be consumed in moderation.
Dairy can also be a cause of a lot of inflammation for certain people, so it is always good to know what options you have to keep the flavors you love, while making a healthier choice.
If you do not have a nut allergy - cashew cheese may be the perfect thing to try.
I always encourage you to make your own, because just like traditional cheeses, many are made with unwanted preservatives or ingredients that are unnecessary and make the products more harmful.
Luckily this is a very easy recipe - one that I make every week to dress tacos, make a spaghetti squash Alfredo, or to indulge in a creamy salad dressing!
1 cup of raw cashews
1 cup of low sodium vegetable broth (might want an extra 1/4 - 1/2 cup for desired consistency)
juice of 1/2 lemon
pinch of thyme
1 clove of garlic (or dash of garlic powder)
dash of black pepper
2 tablespoons of nutritional yeast
Soak the cashews in the vegetable broth for 20 minutes - 2 hours (soaking for longer just makes the sauce a little creamier but it is not necessary)
Combine all ingredients including the soaked cashews and vegetable broth into a food processor or blender and blend.
If you want the sauce a little thinner you can add more broth.
Can be stored in your fridge for one week.
