Annora's Rice and Beans over Arugula

 

This recipe is easy to make and fills you up with all the nutrients you need to fuel your day. 

It is also good to make in bulk for multiple lunches or dinners. The rice and beans mixture can be very versatile.

In this recipe we put it over arugula but you could also use it in a wrap or on top of half of a sweet potato!

Try different combinations of beans, vegetables and grains. The more creative the more FUN.

A good rule of thumb is to incorporate as many colors as you can, it makes the food more pleasing to the eye and more pleasing to your health!  

 

Rice Bean and Arugula

Ingredients

  • 1 can of beans (blacks, garbanzo, kidney) 

  • 2 cups of cooked brown rice 

  • 1/2 red onion chopped

  • 1/2 large cucumber chopped

  • 1 cup of sun-dried tomatoes (no oil)

  • 1 yellow tomatoes chopped

  • juice of one lemon

  • spices of choice 

  • Arugula 

Makes 6 servings 

Directions

  1. Cook rice according to box. If you need quick meals look for frozen brown rice that you can heat up in the microwave - Trader Joe's has a brand and one packet makes a perfect 2 cups for this recipe. 

  2. Chopped vegetables as rice is cooking.

  3. Open and rinse can of beans.

  4. Combine all ingredients into a large bowl. Add lemon juice and spices and mix well. 

  5. Serve over a handful of arugula.

  6. Store in fridge for up to 5 days.
